Baked Chicken Supreme


This is the dish that Beth made the other day. My friend, Perri, asked for the recipe, so here it is:

4 cups cooked chicken, cut into bite-sized pieces
4 cups thinkly sliced celery (she put in one celery stalk)
1 cup chopped pecans
2 cups mayonnaise (she used lite)
4 T. chopped onion
4 T. lemon juice
1 cup grated mild cheddar cheese
salt and pepper to taste (it doesn't need salt)
2 cups crushed potato chips
1/4 cup chopped pecans

Toss chicken, celery, and 1 cup chopped pecans together. Puree mayonnaise, onion, lemon juice, cheddar cheese, salt and pepper together in blender. Combine chicken mixture with sauce. Put in 9 x 13 casserole dish. Top with potato chips and 1/4 cup chopped pecans. Bake at 450 degrees for 10 to 15 minutes. Serves 8.
